Eric Thill - Savagnin - Côtes du Jura
Vin Jaune is made only from the Savagnin grape. No other grapes for this type of wine are allowed in the Jura. DNA studies of the grape indicate that Savagnin has been around for more than 900 years and that the primal grape is a parent of Sauvignon Blanc, Chenin Blanc, Sylvaner and Verdejo. Formerly widespread in Europe, its planting is now limited almost exclusively to the Jura. The ageing of the wine for about 7 years means that a Vin Jaune is always at the top end of the market in terms of price. On the other hand, it is an artisan product with an incredibly rich flavor that can keep for a long time once opened due to its oxidative character. It is also one of the best wines in the world. Well worth the investment.
